Brief Description

Cheakamus Centre is located in Brackendale BC, just located just North of Squamish and sits on a 165-ha ecological preserve primarily focused on experiential and indigenous education.

Job Description and Responsibilities:

The Chef acts as the second-in-command, assisting the Executive Chef to oversee the culinary operations of the Cheakamus Centre, while ensuring precise adherence to visiting students and guests’ medical and nutritional requirements. This role demands a blend of administrative data management, regulatory compliance, elite culinary leadership to manage kitchen staff, inventory, and food quality, high-volume food production and ensure daily meals, often special dietary ones, meet strict nutritional, safety, and quality standards.

This role demands strong interpersonal and organizational communication skills to bridge the gap between nutrition, education, and administration. A passionate leader with a solid background in culinary management, able to create exceptional, high-quality, and artistic culinary experiences, requiring mastery of cooking techniques, menu innovation, and strict kitchen management. Mentorship, calmness under pressure, and an ownership mentality are essential for fostering a supportive environment for your team.

This role is vital in ensuring that food services are efficient, compliant with health regulations, and meet the unique nutritional needs of students.

Core Responsibilities

• Dietary Data Management: Review medical records to identify specific dietary needs, allergies requirements. Liaise with wellness supervisors, administrative and FOH staff to ensure all guest diet information is accurately captured and updated.
• Clinical Nutritional Adherence: Collaborate with the Executive Chef to ensure all meals comply with specialized therapeutic diets, severe allergies (Celiac, anaphylaxis, ARFID), diabetics, and other dietary restrictions.
• Culinary Excellence: Lead the kitchen team in the preparation and delivery of high-quality, nutritious meals that meet both Cheakamus Centre standards and Canadian Food Guide requirements.
• Menu Development and Production: Collaborate with Executive Chef to create diverse, seasonal menus that satisfy regulatory health standards and diverse guest dietary restrictions and preferences. Plan and execute menus, filling gaps in production as needed and ensuring high-quality, appealing meals.
• Compliance & Safety: Maintain strict sanitation, HACCP, and safety protocols to meet healthcare facility and Vancouver Coastal Health regulations.
• Administration: Assist Executive Chef to manage inventory, procurement, labor costs, attend interdepartmental meetings (Logistics, sales etc.) and other duties as required.

Required Qualifications & Skills

• Experience: minimum 3 years of experience as a Chef or Sous Chef in a reputable fine dining establishment or upscale hotel. Food service management experience (large-scale institutional setting) an asset.
• Leadership: Strong ability to mentor staff, resolve conflicts, and lead a team in high-pressure environments.
• Culinary Expertise: Exceptional knowledge of modern and classical cooking techniques, flavor pairings, and culinary trends. Strong background in scratch cooking, recipe costing, and menu planning for specific dietary restrictions.
• Technical Skills: Proficiency in Microsoft Office (Word, Excel) and inventory/accounting software.
• Organizational Mastery: Exceptional time-management and organizational skills to handle multi-faceted kitchen logistics.
• Verbal & Written Proficiency: Excellent interpersonal skills to maintain open lines of communication regarding student dietary restrictions, allergies, and health accommodations with schools and parents and administrative staff.
• Education: A degree or diploma in culinary arts, hospitality management, or a related field is highly preferred.
• Certifications: Advanced Food Safe Certification
• Ability to work standing for 8-hour shifts
• Willing to work overtime as required
• Must be eligible to work in Canada

Education Requirements:

• Food Safe Level 1 certification
