Joe Chow’s Restaurant has been serving authentic Chinese cuisine to the New Glasgow community for many years. We are committed to preparing traditional Chinese dishes using quality ingredients while providing consistent food quality and friendly service. We are currently seeking an experienced Chef to lead our kitchen operations and maintain the high standards our customers have come to expect.
Key Responsibilities
•Plan and organize daily kitchen operations by reviewing reservations, expected customer traffic and take-out orders, assigning food preparation tasks, coordinating workflow among kitchen staff, and ensuring ingredients, house-made sauces and workstations are fully prepared before each service period.
•Prepare and cook a wide variety of authentic Chinese dishes, including seafood, meat, poultry, vegetables, soups, noodle dishes, rice dishes, BBQ items, house-made sauces and the restaurant’s signature specialties while maintaining consistent flavour, presentation and portion sizes.
•Develop seasonal features, improve existing recipes and participate in updating menu items by adjusting ingredients, sauces and cooking methods based on seasonal availability, customer preferences, food costs and the restaurant’s operational needs.
•Inspect dishes before they leave the kitchen to ensure flavour, appearance, cooking quality and portion sizes meet the restaurant’s standards, and instruct kitchen staff to correct or remake dishes whenever necessary.
•Monitor inventory levels, estimate ingredient requirements based on daily business volume, identify items running low, recommend purchasing quantities, and assist in controlling food costs by reducing waste, maintaining proper stock rotation and minimizing unnecessary spoilage.
•Supervise cooks and kitchen assistants throughout each shift by assigning duties, coordinating workflow, adjusting staff assignments during busy service periods, monitoring work performance and helping resolve kitchen issues to ensure efficient and timely food service.
•Train and coach kitchen staff by demonstrating Chinese cooking techniques, wok cooking, knife skills, sauce preparation, food presentation, portion control, safe food handling practices and the proper operation of kitchen equipment to maintain consistent food quality.
•Ensure all food preparation, storage and kitchen operations comply with food safety, sanitation and workplace safety requirements, and maintain a clean, organized and efficient kitchen environment.
•Monitor the condition of kitchen equipment, arrange repairs when required, recommend replacement of worn or damaged equipment, and communicate equipment or maintenance needs to management to support efficient kitchen operations.
•Assist management in evaluating the practical cooking skills of kitchen applicants, provide recommendations during the hiring process when requested, and train newly hired kitchen staff on recipes, kitchen procedures, food safety practices and the restaurant’s operating standards.
•Personally prepare signature dishes, seasonal specialties, customer special requests and other complex menu items when required, while overseeing food production during peak business hours to ensure consistent quality and timely service for both dine-in and take-out customers.
Qualifications
•Minimum 8 years of experience as a Chef or in a senior cooking role specializing in authentic Chinese cuisine.
•Strong knowledge of traditional Chinese cooking techniques, including wok cooking, knife skills, sauce preparation and kitchen organization.
•Demonstrated ability to supervise kitchen staff, coordinate daily kitchen operations, maintain consistent food quality and train junior kitchen employees.
•Ability to work efficiently in a fast-paced restaurant environment while maintaining high standards of food safety, sanitation and workplace safety.
•High school diploma or equivalent is required.
•Ability to communicate in Mandarin or Cantonese is required to effectively coordinate daily kitchen operations and provide training within the kitchen team.
