Job Description

Responsible for overseeing daily butchery operations, cutting, trimming, portioning, and preparing meat according to quality and portion standards. Duties include supervising and training butchery staff, managing inventory and stock rotation, maintaining proper storage, minimizing waste, and ensuring all meat is handled safely and hygienically. Maintain a clean and organized work area, operate and maintain butchery equipment, follow food safety and sanitation procedures, and ensure consistent quality and freshness of all meat products.
