Job Description

Valbella Gourmet Foods, located in the mountain town of Canmore, AB, is currently seeking a permanent, full-time Butcher to join the team.

A butcher, in both retail and wholesale settings, is responsible for preparing, cutting, and trimming a variety of meats, including specialty cuts, ensuring quality and adherence to safety standards, and managing inventory to meet customer and business needs.

The main duties of a butcher include, but are not limited to:

Cutting, trimming, boning, and preparing custom and standard cuts of meat for displays in the onsite retail store and per customer orders.
Preparing meat for wholesale deliveries.
Managing inventory and assessing product quantity, variety, and freshness according to company and customer standards.
Following Hazard Analysis and Critical Control Points (HACCP), Canadian Food Inspection Agency (CFIA) guidelines, and food safety standards.
Ensuring proper food storage conditions are maintained.
Training and supervising junior butchers and meat cutters when necessary.

Education level: Secondary (High) school graduation certificate

Required skills: Work experience: At least 2 years of experience in a butcher position. Strong decision-making skills in a fast-paced environment. Extensive knowledge of various types of meat, including different cuts and their uses. Proven capability to maintain high standards of quality and safety. Experience using butcher-specific equipment, including grinders, band saws, and specialized knives.

Additional skills / Assets: Having knowledge of the Swiss culture, specifically their traditional meat products would be an asset.
