Responsibilities:
 Create a sushi menu that includes different ingredients and raw fish, such as
salmon, tuna, unagi and other; 
 Prepare all types of sushi, including maki, nigiri and sashimi; 
 Slice and present sashimi in its various forms, i.e. rolls, temaki, nigiri, sashimi,
futomaki;  
 Add additional flavors to sushi rolls with ginger, rice vinegar, wasabi and soy
sauce, when appropriate; 
 Prepare Japanese appetizers, soups and salads; 
 Fillet fresh fish suitable for sushi consumption; 
 Bake Japanese deserts from scratch;  
 Make sushi rice;  
 Make Japanese sushi sauces; 
 Supervise kitchen staff and helpers;  
 Organize and manage buffets and banquets;  
 Order supplies and equipment;  
 Manage kitchen operations;  
 Inspect kitchens and food service areas;  
 Maintain inventory and records of food, supplies and equipment;  
 Prepare and cook complete meals or individual dishes and foods;  
 Plan menus, determine size of food portions, estimate food requirements and
costs, and monitor and order supplies; 
 Train staff in preparation, cooking and handling of food;
