Amami is an 80-seat fine dining Italian restaurant and lounge opening in August 2025 in Brampton. Rooted in authenticity and elevated by innovation, our kitchen blends traditional Italian techniques with bold modern flavours. With a focus on seasonal ingredients, elegant plating, and exceptional service, Amami aims to be one of the GTA’s premier culinary destinations.
We are looking for two motivated and reliable Sous-Chefs (NOC:62200) to join our opening team and deliver authentic, flavorful dishes that showcase the richness of Italian cuisine. You will play a key role in maintaining consistency, quality, and taste while working in a collaborative kitchen environment. You will be responsible for preparing ingredients, executing dishes during lunch and dinner service, and maintaining a clean, organized kitchen. Key Responsibilities:

Estimate amount and costs of supplies and food items

Maintain records of food costs, consumption, sales and inventory

Demonstrate new cooking techniques and new equipment to cooking staff

Supervise activities of specialist chefs, chefs, cooks and other kitchen workers

Create new recipes

Instruct cooks in preparation, cooking, garnishing and presentation of food

Prepare and cook complete meals and specialty foods for events such as banquets

Supervise cooks and other kitchen staff

Prepare and cook food on a regular basis, or for special guests or functions

Prepare and cook meals or specialty foods

Requisition food and kitchen supplies

Arrange for equipment purchases and repairs

Plan and direct food preparation and cooking activities of several restaurants

Plan menus and ensure food meets quality standards

Prepare dishes for customers with food allergies or intolerances

Supervise activities of sous-chefs, specialist chefs, chefs and cooks

Train staff in preparation, cooking and handling of food

Qualifications:

Secondary (high) school graduation certificate or equivalent experience an asset

Minimum 7 months to 1 year experience preferred

Experience in Italian or upscale dining establishments is an asset

Strong knife skills and understanding of kitchen stations (grill, pasta, garde-manger, etc.)

Ability to work in a fast-paced, high-pressure environment

Punctual, dependable, and a team player

Flexible availability, including evenings, weekends, and holidays
