Job Description

We are a newly established but fast-growing restaurant offering authentic northwest Chinese cuisines in West GTA: hand-pulled noodles, specialty lamb and beef dishes, along with many other all-time Lanzhou favourite side dishes and desserts, such as Lanzhou specialty cold sliced crepe, our signature lamb sandwich, sweet red beans, fermented rice with fruits, etc.. We strive to do the right thing for our food, people and community by the sharing of authentic ethnic foods prepared in the traditional way with fresh, nutritious and delicious ingredients yet quick served to suit the fast pace of urban life.
What will your typical day look like?
As the executive chef, you will be sharing our passion about the creation of healthy, delicious ethnic foods. Along with our manager, you will be in charge of menu development/update, kitchen staff management as well as food preparation. Your main duties include:
– Plan, direct and participate in the preparation and cooking of Lanzhou hand-pulled noodles, lamb and beef dishes, Lanzhou specialty desserts and other foods
– Enhance food quality by creating standards for other kitchen staff members
– Regularly update menu by incorporating new ingredients or flavor
– Ensure recipe adherence in kitchen execution of all products served
– Ensure consistency of quality, portion control and plated presentation
– Ensure promptness of food products.
– Work with the manager to ensure food, beverage, and labour budgets are maintained and monitored
– Oversee kitchen operation, ensure adherence to food handling requirements and control waste and spoilage
– Ensure the routine cleaning and sanitizing of production areas according to the established cleaning standards and schedules along with always maintaining at all times a clean, sanitary and safe work station
– Provide training to new cooks in the preparation, cooking, garnishing and presentation of dishes.
– Other tasks as may be required.

What’s in you? You are someone with:
• In-depth knowledge of Lanzhou style cuisine and north-western Chinese Halal foods in general.
• Superb skills in the cooking techniques of Lanzhou noodle dishes, Halal meats, Lanzhou Specialty desserts, etc.
• Minimum 3- 5 years of progressive experience in similar style restaurant
• Minimum 2 years of experience in a commercial kitchen supervising and managing capacities
• Completion of secondary school; vocational training or certificate in culinary arts an asset
• Ability to work under pressure in a fast-paced environment
• Willingness and availability to work some evening, weekends/holiday hours
• Excellent ability to multi-task and coordinate with others
Terms of Employment: This is a full-time position of indeterminate duration.

You will be working for an average of 40 hours per week, 52 weeks a year.

Wages: $26-30/ hour
