MDF Canada Inc o/a Marvelous by Fred (Aux Merveilleux de Fred in French), its original & legal name is based on a very famous patisserie that was born in France in 1995. Now there are nearly 50 restaurants around the world today.

The name of the establishment was made on chef Frederic Vaucamps Merveilleux cakes’ recipe: meringue coated in chocolate whipped cream covered with shavings of dark chocolate. Alongside the Merveilleux were other pastries including the succulent Cramiques and the delicious Flemish waffles.

As a Pastry Chef, you will play be a key role in the making our signature desserts. Your responsibilities and duties will be:

• Prepare and cook the meringue following Chef Vaucamp’s special recipes
• Prepare all the different flavoured whipped cream for our Marvelous cakes according to special recipes and methods.
• Assemble in a very fast way and techniques and make the cakes made of meringue and whipped cream.
• Bake mixed dough and batters
• Prepare special orders
• Instruct cooks in preparation, cooking, garnishing and presentation of food, including demonstrating new cooking techniques and new equipment to cook staff.
• Operate machinery (professional mixers, use of ovens)

• Decorate and frost cakes and baked goods
• Ensure that the quality of products meets established standards
• Requisition of supplies, material and equipment.
• Draw up production schedules
• Organize and maintain inventory
• Oversee sales and merchandising of baked goods
• Train staff in preparation, cooking and handling of food
• Other related duties (such as keeping an organized environment and cleaning of the lab)

The job pays $20.00/hr and requires a candidate to work between 32 – 40 hours a week. Permanent F/T, work can be scheduled between Morning, Early Morning, or Weekend. Education level: Other trades certificate or diploma or equivalent experience Baking and pastry arts/baker/pastry chef

Required skills: The ideal candidate would ideally be trained in Marvelous by Fred methods and techniques. However training will be provided to get you up to speed.• You would be given a trial where you will be evaluated on your agility and dexterity.
 • To have completed a course / degree in bakery • Two years to less than three years • Food handlers’ certification is an asset • Must be prepared to supervise between one to two people • To be able to plan and organize the production on your own • To know health regulations as to cleanliness • A passion for baking and enjoying the team work • Must be independent in your duties and problem solving • Lifting weight up to 20kg • Must be able to work weekends • Understanding French is an asset, speaking it is even better
