Qualifications:
– Ability to communicate in English orally and in writing is required;
– Completion of secondary (high) school is required;
– 3 years to less than 5 years of experience working as a chef or cook in a commercial restaurant kitchen is required;
– Practical experience in traditional Sanuki-style udon preparation is required, including specialized skills in dough handling, noodle production, and precise cooking techniques that involve controlling temperature, humidity, and timing.

Job Duties:
– Plan, organize and oversee daily kitchen operations to ensure efficient workflow and consistent food quality;
– Supervise, coordinate and schedule activities of cooks and kitchen staff;
– Develop, standardize and maintain traditional Sanuki-style udon and dashi recipes to ensure product consistency and quality control;
– Oversee in-house preparation and cooking of hot and cold udon noodles, donburi dishes, sushi, sashimi and specialty menu items;
– Participate in menu planning, seasonal menu development and new dish creation;
– Monitor inventory levels, requisition food and kitchen supplies, and control food costs and waste;
– Ensure compliance with food safety, sanitation and workplace safety standards;
– Train kitchen staff in food preparation techniques, plating presentation, portion control and safe food handling procedures;
– Prepare and oversee preparation of dishes for customers with food allergies or dietary restrictions;
– Maintain quality control standards for food preparation, presentation and portioning.
